Advanced topics related to food safety and quality including current issues regarding
microbiological and viral threats from food, and the mitigation of bio-logical and physical
threats through the use of HACCP, ISO and SQF standards. Impacts of recent
regulations, such as the Food Safety and Modernization Act of 2011 and the Bioterrorism
Act of 2002 on food production and distribution will be discussed. Allergen control,
modern plant sanitation techniques and pest management will also be covered. Methods
of statistical process control as related to maintaining constant product quality will be
explained. Advanced sensory techniques related to product matching and flavor profiles
will be included as related to product quality. The course is delivered through WSU’s
online delivery system, “Angel.” It contains fifteen weekly units, including lectures, video
clips and web links.
You will prepare a 12 page, double spaced, 12 font max research paper for this course. It
will have a minimum of 20 references from reputable journals or web pages from
university or government sources. You will choose a topic based on class content and
submit your proposed topic to the discussion board where it will be reviewed by your
peers for suitability. Once approved, you will submit your first five references for
similar review. Following that you will gather the rest of your references and write the
conclusions section for your paper which will again be peer approved. You will then submit
a draft of your complete paper for peer review, followed by a final draft which will be
evaluated by your peers and graded by the professor. See the above schedule for due

on any assignment will be given an F grade for the course and will be reported to the
